Our March “More Joy” tasting will be held at Waikiki Moana Resort’s Beachhouse Grand Salon, one of Honolulu’s most elegant seaside dining venues. The Moana, Waikiki’s first hotel, is celebrating its 117th anniversary this year. Last month we focussed on the interplay between sweetness and acidity, noticing how some brewers elevate the acidity to make their sakes more vibrant while others keep theirs more subdued. Even sakes that have the same degree of sweetness taste very different depending on the acidity level.

This month we’ll see how umami fits into the equation. Just like at February’s event, the sweetness (glucose) and acidity of each label will be shown. But for half of the sakes the amino acid measurement will be displayed as well. Amino acids are the building blocks of umami and have a significant impact on the taste we experience from a glass of sake.
