The longer you drink sake, the deeper your appreciation for junmai. This most traditional of sake categories offers a range of flavor experiences, from light and clean to deep and resonant. Our March mini-lecture explains the six basic junmai styles, focussing on taste, texture and overall harmony.
The evening's sake selection includes twenty different junmai labels arranged by style (junmai, tokubetsu junmai, kimoto junmai), along with seventeen daiginjo and ginjo labels for comparison. The tasting takes an hour and is followed by sake appetizers and congenial sake-sipping until 8:00 p.m.
