The first historical reference to sake appears in the 6th Century, when breweries were located around Nara and in neighboring districts. Today this region gives us both the dry sakes of Nada and the refined sakes of Kyoto. Heartland labels often have richer umami flavor than we find with Tohoku sakes, and there are distinctive variations from brewery to brewery.
A total of 39 daiginjo, ginjo and junmai sakes will be available for sampling. As always, there will be a 10-minute talk, followed by a 45-minute tasting of the night's selections. After this educational segment, the enjoyment portion kicks in with an appetizer buffet from Sake Street, Honolulu's newest sake spot.
