Thai cuisine, with its zesty flavors and spicy seasonings, presents a challenge for the sake enthusiast. A mildly sweet sake will often balance a spicy dish, but how do cilantro, basil and coriander fit into the picture? These herbs are a long way from the shiso, ume and wasabi of Japanese cuisine. To get to the bottom of this question Aftertaste has asked Chai Chaowasaree to prepare his favorite Thai dishes, and leave the pairing to us. A total of 39 junmai, ginjo and daiginjo labels will be available for tasting along with a generous buffet of Thai appetizers.
