Our first Aftertaste event of the year is at the exciting new Kaka'ako offshoot of Doraku Waikiki. Packed almost every night since opening, it features the winning Doraku combination of svelte interior design, Miami-inspired appetizers and sushi—and of course one of the best sake menus in Honolulu.

The Program

In 2012 sake makers had to contend with warm weather and harder than usual rice during the brewing season. Nonetheless, there was no shortage of gold award-winning sakes at the 2012 U.S. National Sake Appraisal.

What tools, tricks and techniques do brewers use to produce consistently excellent sake under all conditions? Come early for Chris Pearce's informative talk on what we can expect from the 2013 "vintage year." Afterwards, we'll try sakes made using a variety of different brewing rices,including many award-winners entries from the Appraisal.
