What's the mark of a great junmai sake? No one—not even Tokyo's illustrious National Research Institute of Brewing—has ever been able to define the perfect expression. But we know one when we sip one, and this evening's event provides a rare occasion to taste across a wide spectrum of regional junmai styles.

Some are boisterous, others gentle. Some are sharp and dry, others full of natural umami and sweetness. As a reference point for comparison, a selection of ginjo and daiginjo labels will be available for tasting as well.

Sakamai has put together a savory appetizer menu to highlight this heartiest and food-friendliest of all sake categories. Tasting is from 6:00, with the appetizer service beginning at 7:00.
