Every prefecture in Japan except Kagoshima makes sake. But only a few have developed what can be called a consistent regional style. Not surprisingly, they tend to be prefectures with a lot of sake breweries and often their own research facilities for developing local rice varieties and strains of yeast.
So it’s “4 by 4” for this April’s tasting event. Four prefectures and four categories—daiginjo A, daiginjo B, ginjo and junmai—with three examples from each category for each prefecture. Our selection comes from Yamagata, Niigata, Akita and Saga prefectures. Hawaiian food happens to go great with sake, and The Willows has prepared a menu of local favorites to set off the evening’s outstanding sake selection.
