Sweetness is one of the five basic tastes that make up sake flavor, and many would say it’s the most important. Even the driest sakes contain an element of sweetness, coaxed by koji enzymes from hard grains of rice. And when the sweetness is just right, the result can be magical, especially among premium daiginjo labels.
We’ll try a variety of sakes with differing amounts of sweetness, and well see how glucose is measured at the U.S. National Sake Appraisal—a new procedure in sake-judging that was first introduced in Honolulu in 2017. It’s sure to be a sweet event—don’t miss it!
